RockCrock Tuna Noodle Casserole

I am trying out my RockCrock and LOVING IT!!!  Tonight I made a Tuna Noodle Casserole b

INGREDIENTS:
1- TBS Butter or Olive Oil
2- Cloves of Garlic
2- Cups Spinach
1- Container of Mushrooms
1- Large Can of Mushroom Soup (28 oz)
1- Cup Plain Greek Yogurt
4- Small Cans of Tuna (I prefer Albacore)
3- Cups Twisted Noodles (cooked but with a bite)
2- Sleeves Ritz Crackers or a cup of Butter
1-TBS Butter
Salt & Pepper

Boil your pasta in the RockCrock. Cook your pasta just to a bite, about 7 mins depending on pasta. 

Drain pasta & rinse in COLD water!  Leave in strainer. 
Heat oven to 400*
Return RC to the stove top.  Melt your 1st TBS of butter.  Using a bamboo spoon mix around.  Add the garlic with the Garlic Press. Sauté for 1 min. Add the mushrooms and toss for 2 minutes. Add the spinach and toss around. Sprinkle some salt and toss again, cover for 4 minutes.  Stir up. 

Add the soup, Greek Yogurt and tuna. Chop the tuna up with the Mix 'N Chop, making sure the tuna is broken up. 

Stir well. Add the pasta and toss again. 
Bake in preheated oven for 30 mins. 

While that cooks, put the ritz crackers into the MFP and turn them into bread crumbs. In the 8" skillet, melt the butter on med-low. Add the crackers and toss for 3-4 minutes. 
After the casserole is done, remove and top with crackers. Bake for 5 more mins. 
Remove from oven and let cool 5 mins. 

Scoop and enjoy!

Grinchmas Dinner Celebration


I've been DYING to do this dinner!  It was a big day for Ant, so I decided it called for a celebration. 
A Grinchmas Dinner!  Complete with Roast Beast, Who-Hash, Green Beans Fit For A Queen, Who Pudding and Frinch Punch

Here are the recipes!

Roast Beast
Simple Chuch Roast (my favorite). I put mine into my Pampered Chef Roasting Pan on the stove top. I covered it in Kosher Salt and Pepper. Seared it up then threw it into a 325* oven for 4 hours-ish. 

Green Bean Fit For A Queen
The easiest recipe for this is on the French's Fried Onion container. I believe it is:
1- 10.5 oz can of Cream of Mushroom Soup
2/3 Cup Milk
2- Cans of French Cut Green Beans, drained
1- Can French's Fried Onions 
Pepper
Mix all ingredients but 2/3 cup of onions together. 
Bake at 350* for 35 mins. Add remaining onions and bake 5 more minutes. 

Who-Hash
1- Bag of Frozen Shredded Hash Browns
1- 10.5 oz can of Cream of Mushroom
1 Cup of Sour Cream
2- Cups Cheese
Bread Crumbs
1/4 onion
Salt & Pepper

Mix the potatoes, soup & sour cream together. Chop up onion in Manual Food Processor, add to potatoes. Mix in seasonings and cheese. 
Top with bread crumbs. 
Cover and bake at 350* for 40 mins. 

Grinch Punch
Brace yourselves for this one. It's ridiculously easy!!!
1- Tub of Lime Sorbet
1- Bottle Lemon-Lime Soda
Scoop all the ice cream into Trifle Bowl, pour in soda. 
Hard, I know!

Chicken with Hashbrowns

An original Melissa Herrera recipe...Yes, I was confused about what to make for dinner. So I made up...

Chicken with Hashbrowns
6 Chicken Breasts (boneless, skinless & frozen)
2 Cans Cream of Chicken Soup, 1 Can of Milk
1 bag Frozen Hashbrowns (the shredded kind, not the O'Briens)

Place the Chicken, soup & milk into a baking dish. Season with Salt, pepper & garlic salt.
Bake at 350* for 1hour. Add the frozen hashbrowns to the top & bake for another 30-45 min.

I was worried about the kids eating this, because they're not big COM soup eaters nor do they like gravy (YES, my kids are strange!) But everyone really enjoyed it! I made some vegis on the side and voila, it was Dinner!
*Please remember the measurements are for my family of 7 1/2...so adjust for your family!*

Now wasn't that easy!?!? Why can't you bring your family back to the table?

Chicken Biscuit Pie

This is a twist of Chicken Pot Pie, but made with biscuits, well because I didn't have pie crust =)

2 C. cooked chicken (I used left over's from last night)
2 cans of refrigerated biscuits
1/2 C. frozen vegis (whatever you like, I used the mix with carrots, green beans, peas & potatoes. Or you can substitute with Veg-All, 2 cans, drained)
2 cans Cream Of Whatever You Like
Salt & Pepper

Preheat oven to 400*. Take on can of biscuits & cut into fours. Place them into a 9x13" baking dish. Mix the other ingredients & pour over the biscuits. Then do the same with the other can of biscuits.
Bake for 20 mins or 'till the biscuits are cooked & filling is bubbly.

Fish for dinner

Normally at this time of the year, I try to encorporate Jose's tradition of Lent into our family, but we're not doing it this year. I did buy some Red Snapper though to make one Friday & ended up making it last night, just because we are running low on food.
So here's what we had...
Red Snapper, individually wrapped. It's nicer this way, because you only make what you need rather than defrosting a bunch of fish & having lots of left overs.
I bbq'd these on the grill with salt & All Purpose Dill Mix. We really liked the taste the Dill Mix gave the fish!

Then my mom made us her 'famous' Jasmine Rice. Just plain with butter & salt.

A salad that our friend Karen made for the babyshower. She basically had cole slaw mix in a bowl with mayo. Well, I added some apples, plain yogurt & some splenda & mixed it all up. It came out fabulous!!!! I will definitely be making that one again!!!!!!!

Back in the kitchen

Ok Karla, I am back & posting just for you!
I have been overwhelmed with being a "new" mama, learning routines, getting back to my self, etc.
I have been back in the kitchen, but not cooking like I do.
Well tonight, I made a full meal, even though i didn't want to, because I am completely exhausted from my Laughlin trip & Delayna adjusting to being back. I even cooked with miss fussy in her bouncer on the counter, since I don't have a good carrier yet.
Anyway, here's dinner from tonight...
I made Quick Chicken & Dumplings (as usual, click on the recipe to get it) from Betty Crocker.

I forgot to take an after picture. I had a hungry little girl & was trying to get baby shower stuff done.
Anyway, the results were really good. It was a bit too salty, next time I won't season them on my own. The kids really liked it and it was the best Chicken & Dumplings recipe I have ever made!

Dinner At Disneyland

Well, we decided to take the kids to Disneyland last night. On our way out we stopped by McDonald's and bought 15 hamburgers and a large fry.
We ended up eating 10 of them on our way out and the fries.
Later we were all hungry again and Anthony was begging us for a turkey leg.
I've never understood what his big stink is over these turkey legs.
Well, let me tell you...
These things are MASSIVE and beyond delicious!!!!

Anthony Cooked!

Well, Jose didn't get home until after 8:30pm last night, and I just didn't feel like cooking...Surprise, Surprise!?!
Anthony wanted Tomato Soup with Grilled Cheese Sandwiches and Adriana just wanted a sandwich. My mom & Dom wanted breakfast for dinner.
So what I decided to do is...HAVE A FREE FOR ALL!
Anthony made grilled cheese for Adi & himself and tomato soup to go with it.
My mom made potatoes, eggs and toast for her & Dominic.
I ate Anthony's left overs.
Voila, dinner made simple!!!

Monday Night's Dinner

Sunday night we served Mozzarella Sticks for FUSION and there were NONE left over...UGH!
After we left, we stopped by the store to find some & had no luck.
I went shopping today and was on a hunt for Mozzarella Sticks!
Wal-Mart had them and weren't very pricey, so I bought me a bag!!!

So for dinner I decided we were having...
Buffalo Wings & Mozzarella Sticks
No pics, Totally Unhealthy, and a TOTAL pregnant woman dinner :)
But, if you can get to the store, buy a bag or two of Mozzarella Sticks & Wings, cook them as directed. Add some of this:
To your wings. Then your good to go!
