Tri Tip & Corn Salad

Tri Tip
~1 Tri Tip (to your liking) *mine was just over 2lbs
~Rosemary
~Salt
~Pepper
Grill on gas bbq at medium heat for 20mins each side. You don't want to over cook your tri tip. It is a great piece of meat, but can easily be ruined by over cooking it. So if you don't like rare meat, don't bother!



Corn Salad
What better way to keep things cool & nutritios, but still have some starch in your meal.

~1 bag frozen sweet corn, thawed
~1 can whole tomatoes, cut up
~ 1/4 of a red onion, cut up
~1/4 C butter
~Salt & Pepper

Take the butter & melt into a pan. Add your onions to get them cooking, add the corn, tomatoes and salt & pepper for flavor (you can even encorporate the rosemary into this dish, if you'd like). Saute till the flavors marry & the onion is tender.
Place in refridgerator to chill (or you can eat warm. whatever your preference)

Onion Broiled Chicken Thigh & Au Jus Sauce w/ Cheesy Potatoes

So, life has grabbed me and just ain't letting go. I did NOT feel like even cooking, but I do have a family I must care for. So here it goes...

Onion Broiled Chicken Thighs w/ Au Jus Sauce
12 Chicken Thighs
2 Pkg Lipton Onion Soup Mix
1/4 C Olive Oil
2 tsp cornstarch

Heat oven to 425*. Get a pan that can take the broiler & line with foil (the best trick I've ever learned for clean up!). Place the thighs in the pan. Mix olive oil & soup mix together & slather it over the thighs.
Bake for 40 mins.
Take the thighs out & pour the drippings into a pot. Mix the cornstarch with 1/4 c. of water, pour into drippings. Let warm up & thicken just a bit, remember, it is Au Jus sauce, not gravy.


Potatoes
Make instant potatoes as directed, but add some Parmesan cheese into the instant potatoes.

Serve all together. Place the Au Jus into a bowl & dip away. The Au Jus can also be poured over the potatoes, if desired.

Just for Karla =)

K, I didn't know what I was going to make for dinner. I took out ground beef (YUCK!) and ground turkey. I thought of meatloaf, but Jose & Ant aren't big on it. They wanted tacos, but we had burritos last night for dinner. Don't get me wrong, I love me some good shredded beef tacos, but boring ground beef? Nah, I'll pass!
So, I got online and found:
One Pot Beef & Rice Skillet
I used 1/2 beef & 1/2 turkey instead of all beef & the following ingredients for the remaining called ingredients


This was the final results pic


The review were as follows:
Jose~ate 2 plates & though it was really good
Ant~ate 2 plates & said it was "da bomb"
Adi~hated it, she said it smelled like throw-up. I think it was the Feta
Dom~didn't like it & ended up eating a bowl of cereal.
Me~I had to pick out the broccoli. I thought it was really good, but needed more Feta & some salt.

Honey's Birthday Dinner

Last night was Jose's birthday. I didn't have any plans for dinner for him, because we were both gonna do seperate things. Well, I got sick and our plans changed. I went to the store after picking the kids up from school and bought stuff for his dinner.

Pasta & Shrimp in Butter-Garlic Sauce, Garlic Bread, Salad

PASTA
~1 lb of Pasta (I used Angel hair, but prefer Linguine for this dish)
*Cook As Directed

SHRIMP IN BUTTER-GARLIC SAUCE
~2lbs of Shrimp, de-veined & shell/tail removed
~1 stick of REAL butter
~6-8 garlic cloves (depending on your palate)
~Ground Pepper & Salt
~Parsley
*Melt the butter in pan on medium-high heat, you don't want to burn your butter. I add a bit of olive oil to help w/ the melting process. Press garlic and add to the butter/oil, grind in salt & pepper, add parsley. Mix it all up and toss in the shrimp. Cook just until they turn pink (you DO NOT want to overcook shrimp!).
*Toss all over Pasta

GARLIC BREAD
*Feel free to make your own, but we like this:

Cook according to package directions

SALAD
~Bag of mixed greens
~1-2 Cucumbers
~2-3 Tomatoes
Chop the bigger vegis up, toss into greens & enjoy!

Very easy, took about a total of 40 mins to do it all & it was a HIT!
